Here is my recipe for the Twitter #recipeXchange:
Hayley’s Chicken Pies (Makes 8 pies)
4 Puff pastry sheets
2 chicken breast fillets
1/2 tin Campbells (or other) Chicken and Corn condensed soup
Crushed garlic
Soy Sauce
Olive oil
Method:
Dice the chicken into pieces.
Brown the chicken in olive oil in a hot fry pan, lightly coating with garlic (about a teaspoon) and soy sauce (pour over chicken enough to lightly coat each piece of chicken).
Once chicken is just cooked through remove from heat.
Cut pastry sheets on the diagonal in half.
Place several pieces of chicken (about 3-4) in the middle of the triangle.
Add to the meat a tablespoon of condensed soup (do not pre-heat the soup)
Then fold the edges of the triangle on the longest side in to meet the bottom point of the triangle. (Should make the triangle now look like a square).
Use a fork to press the edges together along the edges that are not sealed (one edge is a fold and doesn’t need to be forked)
Place in a hot oven (approx 180-200) and cook for approx 20 minutes or until pastry is golden brown.
Serve with a side salad or vegetables.
Prep time: 15 mins Cook time: 20 mins




I’ve yet to try this but it looks delicious and I have it on good authority that it does work!
5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug
Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don’t be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous).

Ingredients
1.5 cups grated zucchini
1/2 cup grated onion
1 cup grated carrots
1 cup grated bacon
1 cup cheese
½ cup plain flour
5 eggs
Add extra veggies to taste (add an extra egg)
Add seasoning to taste
Variations: Substitute Chicken or Tuna for Bacon.
Method
1. Grate the vegetables
2. Whisk the eggs.
3. Add flour
4. Mix in veggies
5. Add bacon
6. Pour into a baking tray
7. Cook on 180 degrees until skewer comes out with no fluid on it.
8. Delicious served with salad and fish or chicken.
